No-bake, sweet cinnamon coconut balls – no equipment needed

I just spent a week catering for a retreat in Southern Spain, making delicious raw meals for a bunch of wonderful people. I didn’t need to bring any of my usual dessert ingredients (cacao butter, coconut oil, moulds, vanilla, medjool dates etc) but I really wanted to make them something sweet, so I had to improvise by using easy to find foods.

So I made them an apple cake which was really nice, but then I got home and decided to make something even easier, with no equipment at all. These coconut balls would be great fun for kids to make and they can be modified in so many different ways to suit your taste!

They are light quite soft, so don’t expect a hard and chewy dessert.


  • 1 cup coconut flakes (pick the tiniest flakes or use coconut flour)
  • 1 small red apple (1/3 cup) – peeled
  • 1/4 cup peanut butter* (or any other nut butter)
  • 1/8-1/4 cup coconut blossom sugar
  • 1 tsp. cinnamon powder (here’s a helpful site if you’re looking for cinnamon supplements)

How to make the coconut balls:

  • Peel the apple and grate it using the smallest holes on a grater to make apple puree.
  • Mix everything in a bowl and squish it around with your hands.
  • Form the mixture into balls or bars.
  • Put them into the fridge or freezer and serve cold.
  • If you want them to be drier (this will vary depending on your apple), add some extra coconut, oat or almond flour

*To make peanut butter, put 3 cups of peanuts into a food processor or Vitamix and blend until it’s smooth and oily.
