Winter root-vegetable salad (raw)
So as I’ve mentioned before, I am trying to eat seasonally this winter and now I have an incredible amount of root vegetables at home that I’ve no clue what to do with, so I went on to experiment
The resulting salad was actually rather yummy and sooo easy to make!
♨ Kohlrabi (half)
♨ 1 zucchini
♨ 1 carrot
♨ 1 parsnip
♨ half a lemon
♨ olive oil
How to make:
♨ Personally, I’ve never even held a kohlrabi before in my life, so when I read that you can eat it raw, I was quite excited to try it. It tastes kind of radishy, but not as strong. You begin by peeling the kohlrabi (see pic of what it looks like).
♨ It’s too round to peel with a julienne peeler (that makes it look like spaghetti) so I just grated it using the largest blades on the box grater, then cut it further into strips.
♨ The rest of the vegetables you can turn into “pasta” using either a spiraliser if you have one, or a julienne peeler. The carrots I just grated to vary a little.
♨ Mix it all up in a bowl, then add salt, olive oil and lemon juice to taste.
♨ After a few minutes, it will release juice (especially the zucchinis) and go softer, which will make it nicer to eat.
It’s filling enough to eat on its own, or you can use it as a side dish like I did here with a pumpkin-parsnip soup mmm!
P.S: later I went on to experimenting further and made an avocado & sun dried tomato paste, which turned it into proper pasta and was so good that I ate it too fast to take a photo Also I cooked it in a trance so I don’t remember exactly what I did, but if I ever recreate it I will write down the recipe!
